★What is Hoba Leaf?★
It is the leaf of the Magnolia tree (Magnolia obovata), a plant in the Magnolia family.
Its large leaves have natural antibacterial properties, and have been used since ancient times as a substitute for dishes or as a wrapping material for food.
Perhaps the most famous use of Hoba leaves is for Hoba Miso, a regional dish from Gifu.
It is a simple cooking method where miso is mixed with chopped green onions, shiitake mushrooms, ginger, and sesame seeds, then placed on a Hoba leaf and grilled. The unique aroma of the Hoba leaf enhances the flavor of the grilled miso.
☆How to make Hoba Sushi (one example)☆
Wipe the surface of the Hoba leaf clean with a damp cloth.
Make sushi rice by adding sushi vinegar to freshly cooked rice.
Spread the sushi rice in the center of the Hoba leaf and arrange the toppings colorfully.
Fold the Hoba leaf in half and place a light weight on it to let it rest.

Letting it rest allows the leaf's aroma to transfer to the sushi rice.
When taking it out, not only fold the leaf but also wrap it securely to prevent the contents from spilling.
