Chicory is a lovely herb that produces blue flowers around early summer. The component called chicoric acid found in chicory is said to have effects such as improving liver function, reducing skin puffiness, and detoxifying by expelling waste products.
The flowers are eaten as edible flowers, used to decorate salads and sweets.
Additionally, the small white vegetable, resembling a Chinese cabbage, grown from blanching the leaves, is also known as endive in French. It's familiar as an appetizer with prosciutto, shrimp, or seafood placed on top of the leaves.
It's a stylish vegetable popular for its crisp texture and slightly bitter taste.
Chicory is an herb where the flowers, leaves, and roots can all be eaten. The roots are roasted and used as a coffee substitute, drunk as caffeine-free chicory coffee.
