How about it in today's health-conscious era?
It's packed with nutrients and grows every year with minimal care.
Okawakame (Hill Seaweed) is not seaweed, but a vine-like leafy vegetable from the Basella family.
When lightly boiled, it develops a slimy texture and feel similar to seaweed, and is known for its extremely high nutritional value.
Features and Nutrition:
Also known as Yunnan Hyakuyaku (Hundred Medicines of Yunnan), it is extremely rich in magnesium, calcium, zinc, folic acid, vitamin A, and more.
How to Eat: Not only the leaves but also the stems and tubers (mucilage) can be eaten. Lightly boil in boiling water for about 10-15 seconds and then rinse in cold water to bring out its beautiful green color and sliminess.
Recommended Recipes: Perfect for boiled and seasoned dishes, dressed dishes, vinegared dishes, and as an ingredient in miso soup.
How to Grow:
It is very resilient and resistant to pests and diseases, making it popular for home gardens and as a green curtain in the summer.
