Jikko Hamono Ginza Gyuto (Double-edged) 210mm

This is a double-edged gyuto knife from the Ginza series by Sakai Jikko Hamono.
I purchased it at their physical store in Osaka.

The material appears to be VG10, but it has a coating on both sides of the blade that makes it appear black.
I was told that this coating may peel off if it comes into contact with acidic substances (like lemon), so please be careful.
