Hotel Okura First Executive Chef's Legacy Item "Ono" Engraved Sugimoto Deba Knife, 21cm Blade Length

US Size:

A vintage Sugimoto deba knife, 7 sun (21cm blade length), solidly constructed. The surface is engraved with the personal name Ono, and the reverse side bears the Sugimoto maker's mark.

Acquired approximately 5-6 years ago, the previous owner stated that this knife is a cherished item associated with Mr. Masayoshi Ono (1918-1997), who served as the Executive Chef of Hotel Okura First and is known as the Father of French Cuisine in Japan.

The previous owner was a relative and explained that it was used by Mr. Ono. However, there is no supporting documentation. Please understand the provenance as a tradition.

It seems that it was not uncommon for Western cuisine chefs to use Japanese knives at the time.

Upon acquisition, there was rust and minor chipping on the blade, but the following work has been performed:

* Rust removal
* Repair of blade chips through sharpening
* Replacement of the handle with a new water buffalo horn handle

It is currently in usable condition. After performing maintenance upon acquisition, it has been stored without use.

This is not merely a cooking tool, but a masterpiece with a history and background that has been treasured. However, due to circumstances, it is now being parted with.
