Koichi Izumi Chef Supervised cotta Silform Tart Mold, 8 Cavities, Baking Mold, Baking Pan
This is the cotta Silform Tart Mold (8 cavities), supervised by Chef Koichi Izumi.
It has been used a few times and stored at home. I am selling it as I am organizing my baking tools.
This tart mold is made of the same material as Silpat and features a mesh-like processing.
Its characteristic is that excess oil and moisture can easily escape, resulting in even browning and a flat bottom.
You can easily make tart cups by simply fitting dough cut with a pastry cutter or similar tool into the mold.
No weights like tart stones are needed, and there's no need to grease the mold or use oil spray.
Additionally, you can use it by simply placing the tart dough on the inverted Silform, and the dough will naturally lower as it bakes in the oven, resulting in a slightly larger size than when fitted into the mold.
For more details, please refer to the cotta product page.
