The surface is polished to a high shine, and the four corners are rounded. The top and bottom edges are beveled to prevent injury. The shine is from polishing, not coating, so you can use it with confidence as a rolling board.
Natural marble has high thermal conductivity and low specific heat capacity, making it cool to the touch. This helps suppress the temperature rise of dough, making it less sticky, and is very useful for kneading pizza, bread, pie, and pastry dough, as well as for chocolate confectionery.
